ACF Black Hills Chapter of Professional Chefs Meeting Minutes

 Monday June 1st 2026

Jeff Slathar called the meeting to order at 4:41 pm after he did a flambé demo of cherries foster with a crepe. It was held at Terra Sancta Retreat Center in Rapid City.

In attendance: Fred Ferrara, Jeff Slathar, April Malik.

Corrections for last meeting minutes: attendance should include April; scholarship motion edited as Fred had moved and had Jeff seconded.

Old Business

We questioned if Clark & Tim have set at date for the fundraiser dinner yet in order to do it early enough so that the students from Mitchell Tech can stay for the entirety of the dinner.

Jeff reported on the YFS Diamond Dinner Theater Oct 23rd  and 24th . Darci Decker is the contact 605-209-6677. It is for 250 people each night. Jeff &  Fred expressed interest but want to wait until the next meeting to get more input and others interest in helping.

Jeff also reported on the Club for Boys Fundraisers: Gold Tournament, Sept 24th and the Hooked on Hard Water Banquet on Feb 20th . Josh Miranda is the contact 605-680-9750 if we are interested in participating in some way. April still needs to contact Minneluzahan Senior Center and Fork Real regarding our club assistance on their fundraisers.

New Business

Discussed the need to find our By-Laws.

Discussed comping tickets for members to the fundraiser dinner. No action was taken but would like to discuss it and have input at the next meeting.

Fred and his wife Stephanie have started to put together a webpage and Facebook page. For the website they are using a hosting service named porkbun.com. They have purchased the locked domain of acfbhchefs.org. It costs $60/year to host the website and with the domain name renewal it comes to $72/year. Fred said he would pay for the first year.

They have followed the format of other chapters. The home page has a picture of a kitchen and trees.

Fred explained that we could put our minutes on there, as well as emailing minutes.

Fred motioned to approve above actions with the webpage & Facebook, April seconded. Motion carried.

Next meeting will be the first Monday in July, Monday July 6th at the Gold Bison Grille in the DoubleTree hotel by the civic center.

Meeting adjourned at 5:44 pm.

Respectfully,

April Malik, secretary

May 4, 2026 Meeting Minutes

Monday, May 4, 2026

ACF – Black Hills Chapter of Professional Chefs   May 4th 2026  at Stevens High School Culinary Arts room

Meeting called to order by Jeff Slathar at 4:10 pm.

Those in attendance: Clark Braun, Fred Ferrara, Jeff Slathar, Tim Goldhammer via zoom

Clark will get the report on the finances – he is still waiting to finalize numbers from the dinner.

Fundraiser dinner at Alpine Inn

Suggestion was made that there needs to be clarification that all tickets need to be paid for at the dinner, even  for members. It was a successful event. Next year, the date will be set and sent out early so tickets can be  available to prepay and pickup prior to the event with a deadline to pick them up or the tickets will go back on  the market as available. The plan is to go back to 80 attendees. Tim asked for the event to be set during the class  trip so he and the students can stay for the entire dinner. Tim & Clark will set up a date by the end of May, but  don’t need to decide right now who is doing what dish.

Motion was made by Jeff for each of the 5 students that participated this year from Mitchell Tech to receive the  Joe Schaefer Scholarship for $500 each totaling $2,500.

Currently Mitchell Tech covers appetizer ingredient costs. Clark asked if US Foods could donate for Mitchell  Tech’s food costs. Tim will look into it in the future and report back in the fall.

Wine people need to be reminded to not open all the bottles ahead of time. Unopened bottles can be sold.  Agreed that Gallo wines are a good partner, keep them, they donate well.

New Business

YFS dinner for 500 people – normally we provide a check. Question was asked if we should help them to  prepare? Clark said they want chefs to plate but how involved do we want to be? Fred said he is willing to help.  Jeff checked on the date and said it is in October and told Darci Decker that we will help again. Decision should  be made at next meeting about our involvement.

Boys Club fundraiser was discussed. Jeff said he will contact Mark Kline to see what we can do to help.

April mentioned the Minneluzahan as a possible way to help the senior age group with a fundraiser. April will  contact Laura Armstrong, director, and report back.  It was mentioned that the usual amount is $1000 in  assistance.

Tim got 15 new student memberships to our Chapter.

Fred talked about Signature Chefs Auction & fundraising sampling dinner to benefit cerebral palsy and a  program called the Great Chefs Tasting Party. Jeff said Fork Real does a fundraiser like that and he usually  participates. April will contact Rhonda Pearcy to let her know ACF members are interested.

Stevens High School has gotten a $223,000 grant to upgrade the culinary classroom. April will report to the  chapter on updates and will let Matthew James, SHS pathway coordinator, that the club can offer input.

Next meeting is set for Monday, June 1st at 4 pm, at Terra Sancta Retreat Center in Rapid City, SD. Meeting  adjourned at 5:06 pm, Jeff motion, Clark Second.

Respectfully,  April Malik, secretary
